Is citric acid (E330) safe?

What is citric acid?
- A weak acid that occurs naturally in citrus fruit — and in every cell of your body, as part of normal energy metabolism
- Jobs in food: sour taste, acidity regulator (controls pH), preservative helper, and sequestrant (locks up trace metals so fats don't go rancid)
- Label names: citric acid, E330, INS 330, acidity regulator (330), acid (330)
- On Indian labels it very often appears simply as "Acidity Regulator (330)" with no word "citric" anywhere
Which foods contain it?
- Soft drinks, energy drinks, squashes and packaged juices
- Sour and boiled sweets, jellies, gummies, sherbet powders
- Jams, sauces, ketchup, pickles and chutneys
- Tinned tomatoes, tinned fruit and ready meals
- Flavoured noodles, snack seasonings and instant soups
- Frozen and cut produce, where it slows browning
- In India: extremely common in imli and mango candies, sherbet, soft drinks, ketchup and masala snack coatings — look for "acidity regulator (330)"

So why do people worry about it?
- Because it isn't made from fruit. Roughly 99% of commercial citric acid is produced by fermenting sugar (often from maize or molasses) with the mould Aspergillus niger, then filtering and purifying the acid out. The molecule you eat is identical to the one in a lemon; the manufacturing route is not.
- Because of a 2018 case series. A paper in Toxicology Reports described four individuals reporting joint pain, swelling, muscle pain, breathlessness or abdominal cramping within hours of consuming products containing manufactured citric acid, and hypothesised residual mould-derived material as a trigger.
- What that paper is and isn't. Four self-reported cases are a hypothesis worth testing, not evidence that citric acid harms the general population. No regulator has changed its position on the basis of it.
- Because "GRAS" sounds like a loophole. Citric acid's US status predates the 1958 Food Additives Amendment, so it was never pushed through the modern approval pipeline — but EFSA has since reviewed it under the EU re-evaluation programme, including the fermentation production route, and reached the same conclusion.
- One 2026 nuance, often misquoted: EFSA flagged possible secondary metabolites from one specific A. niger production strain in a 2026 animal-feed additive assessment. That is a strain-specific feed opinion, not a finding about food-grade citric acid.
The real caution: your teeth
- Citric acid works on enamel two ways — it lowers pH and its citrate binds calcium
- Systematic reviews of soft drinks, fruit juices and sports drinks consistently find enamel erosion with repeated exposure
- What matters is frequency and contact time: sipping an acidic drink across an hour is worse than drinking it in five minutes
- Drinks with more calcium erode less; water afterwards helps; brushing immediately after does not
- This is a dental-health point, not a toxicology one — and it applies to fresh lemon juice too

Frequently asked questions
Is citric acid bad for you?
Not at food levels, on the current evidence. EFSA, the FDA, FSSAI and the WHO's JECFA all permit it with no numerical daily limit. The practical caution is dental erosion from frequently sipping acidic drinks. A 2018 series of four case reports described inflammatory reactions in sensitive individuals — a hypothesis to test, not a population-level risk finding.
Is the citric acid in my food from lemons?
Almost never. About 99% of commercial citric acid is fermented from sugar using the mould Aspergillus niger and then purified. The finished molecule is the same one found in citrus fruit, and EFSA has assessed this production route as equivalent in safety.
What's the difference between citric acid, sodium citrate and E472c?
Three different things. E330 is the acid. E331 sodium citrate is its sodium salt — fine safety-wise, but it adds to your sodium. E472c "citric acid esters of mono- and diglycerides" is a synthetic emulsifier linked to higher cardiovascular disease rates in a large 2023 BMJ cohort study, and LabelCop flags it as high risk. The similar names are a genuine label trap.
Does it damage tooth enamel?
Frequent acidic-drink exposure does. Citric acid lowers pH and binds calcium, and reviews of soft drinks, juices and sports drinks consistently show erosion with repeated contact. Frequency and sipping time matter more than the additive's presence. Rinse with water rather than brushing straight afterwards.
Is it vegetarian, vegan and halal?
Commercial citric acid is fermented from plant sugars with a mould, so no animal material is involved and it is generally treated as vegetarian and vegan. Formal certification depends on the manufacturer, and an Indian veg/non-veg mark reflects the whole product, not this ingredient.
Can I be allergic to citric acid?
True allergy to the molecule is not recognised, since your own cells produce it. Some people do report reactions to products containing manufactured citric acid, which the 2018 case series attributed to residual mould-derived material rather than the acid itself. If you consistently react, that's worth raising with a clinician rather than self-diagnosing.
