What is sodium nitrite?
- A curing salt used to preserve meat — stops Clostridium botulinum, the bacteria behind botulism
- Also fixes the pink colour and cured flavour of bacon, ham and hot dogs
- Label names: sodium nitrite, E250, INS 250, curing salt (its cousin potassium nitrite is E249)
Which foods contain it?
- Bacon, ham and gammon
- Hot dogs, frankfurters and sausages
- Salami, pepperoni and other cured deli meats
- Corned beef and canned meat
- In India: most common in imported and branded cured meats, sausages and ham — look for INS 250 on the label

Why do regulators disagree?
- The tension is safety vs necessity. Nitrite is the most reliable defence against botulism in cured meat — removing it creates a different, serious risk
- The worry is nitrosamines. In the stomach, nitrite can react with proteins to form nitrosamines, which are cancer-causing
- WHO/IARC: looked at the finished product — processed meat is causally linked to bowel cancer
- EFSA (EU): keeps nitrite legal for food safety, but has cut the permitted amounts to reduce nitrosamine exposure
- FDA & FSSAI: permit it within fixed caps, judging it necessary and safe at those limits

Frequently asked questions
Is sodium nitrite banned anywhere?
No. E250 (INS 250) is permitted as a curing preservative in every major market because it prevents botulism. What differs is the cap: the EU lowered its limits from October 2025, the US allows up to 200 ppm and India up to 120 ppm.
Why does the WHO call processed meat cancer-causing if nitrite is legal?
In 2015 the WHO's IARC classed processed meat as a Group 1 carcinogen, causally linked to bowel cancer, and nitrite curing is one reason via nitrosamine formation. "Legal" means regulators judge nitrite necessary and safe within strict limits — not that processed meat is risk-free. Both are true, which is why the EU keeps cutting the permitted amounts.
What about "no nitrites added" or "uncured" bacon?
These are usually cured with celery powder or juice, which is naturally high in nitrate that converts to nitrite. US testing has found similar nitrite levels to conventionally cured meat, which is why the label must add "except those naturally occurring in...". The chemistry is the same.
Which label names should I look for?
Sodium nitrite, E250, INS 250 or curing salt — plus potassium nitrite (E249) and the nitrates E251/E252. Almost always in bacon, ham, hot dogs, sausages and deli meats.
