Is xanthan gum (E415) safe?
- EU (EFSA, 2017): no numerical daily limit needed, no safety concern at reported use
- WHO/JECFA: ADI "not specified" — the category used for additives with no identified hazard
- US & India: permitted; the FDA's one hard line is premature infants, after a 2011 advisory on a xanthan-gum feed thickener

What is xanthan gum?
- A thickener and stabiliser made by bacterial fermentation of sugars — cane, corn, soya or wheat as the feedstock
- Tiny amounts thicken a lot, and it holds a mixture together so oil and water don't separate on the shelf
- It is a soluble fibre: human digestive enzymes can't break it down, so it reaches the large intestine intact
- Label names: xanthan gum, E415, INS 415
Which foods contain it?
- Gluten-free bread, cake mixes and bakery — it does the structural job gluten normally does
- Salad dressings, sauces, ketchup, syrups and gravies
- Ice cream, frozen desserts, yoghurt drinks and dairy-free milks
- Low-fat and "light" products, where it replaces the mouthfeel fat used to give
- Ready meals, soups and instant mixes
- Medical thickening powders for people with swallowing difficulty (dysphagia)
- In India: common in packaged sauces, ketchups, ice cream, dairy-free beverages and bakery mixes — look for INS 415 in the ingredients list

So where's the disagreement?
- Not between regulators. On xanthan gum they line up — permitted, no numerical limit, no identified hazard at dietary levels
- The gap is between the approval and your gut. Regulators assess hazard; they do not assess whether an ingredient will make you uncomfortable
- Digestive tolerance: safety reviews describe a laxative effect at high intakes, generally quoted above roughly 15 g a day — far above what food supplies. People with IBS or FODMAP sensitivity report gas and bloating at far smaller amounts. No regulator has set a threshold for that
- Gut bacteria: a 2022 study in Nature Microbiology found that gut bacteria in people on industrialised diets have adapted to digest xanthan gum, and that the genetic signatures were largely absent in people in non-industrialised countries. It reports an adaptation, not a harm — the health consequences, if any, are unknown
- The one hard line is age. The FDA's 2011 advisory and the paediatric case reports behind it concern premature infants fed a xanthan gum thickener — a clinical setting, not a supermarket one

If xanthan gum doesn't agree with you
- Symptoms people describe are digestive: gas, bloating, cramping, loose stools — usually dose-related
- It is a fibre being fermented, which is a normal mechanism, not an allergic one
- Gluten-free bakery is often the highest-exposure category, because it needs more of it to work
- Common swaps in home cooking: guar gum, psyllium husk, cornflour, arrowroot, chia or flax gel — each behaves differently, none is a like-for-like
- Persistent gut symptoms deserve a doctor, not an elimination guess — IBS and coeliac disease look similar from the outside

Is xanthan gum safe to eat?
Every major regulator permits it. EFSA concluded in 2017 that no numerical daily limit was needed and found no safety concern at reported use; JECFA's ADI is "not specified"; the FDA permits it under 21 CFR 172.695; FSSAI permits INS 415 in specified foods. The live questions are about digestive tolerance and gut bacteria, not approval.
Why does it give me gas and bloating?
It's a soluble fibre your own enzymes can't break down, so gut bacteria ferment it — and fermentation makes gas. Safety reviews note a laxative effect at high intakes, usually quoted above roughly 15 g a day, well beyond normal food levels. People with IBS or FODMAP sensitivity often react to much less. That's an individual tolerance issue rather than a regulatory one.
Is xanthan gum safe for babies?
The FDA advised in 2011 against a xanthan gum-based feed thickener in premature infants after reports of necrotising enterocolitis, and such thickeners are generally not recommended under one year. EFSA looked separately at E 415 in special medical formulae in 2023 and found no safety concern in that category, while noting its general re-evaluation doesn't cover infants under 12 weeks. Infant feeding decisions belong with a paediatrician.
Is it vegan, gluten-free and halal?
It's produced by bacterial fermentation with no animal ingredient, so it's normally suitable for vegetarian and vegan diets. The fermentation feedstock may be corn, cane, soya or wheat; the finished additive is treated as gluten-free, but the label won't tell you the substrate — only the manufacturer can.
